Have you already heard about bistronomy? It’s a very fashionable trend in Paris. It has been created by a French chef (Yves Camdeborde) in the 90’s.

It’s a breeze of freshness, innovation and creativity on French cuisine. Its purpose is to reconcile “haute” gastronomy (Michelin stars cuisine) with simplicity and affordability. For about 30 to 50 euros, you can enjoy an unforgettable dinner.

It’s indeed a “bistrot” (simple and unpretentious restaurant) where there is a real “chef” generally trained in 1,2 or even 3 Michelin star restaurants. Recipes are made with simple, affordable and yet top quality ingredients. It’s about love of good “cuisine”, reinventing old traditional recipes with a fresh and new eye with an “author” vision full of creativity. Other ways to name bistronomy: cuisine d’auteur, author cooking, fine cooking, cuisine du marché, market cooking, market cuisine…
